A New Chapter

for Hotel Columbia’s Restaurant Space

After 29 years as a beloved part of Telluride’s dining scene, the Cosmopolitan restaurant has closed. We extend our deep appreciation to Chef Chad Scothorn, whose culinary leadership and generosity helped define not only the restaurant, but also the broader hospitality experience in Telluride.

As this chapter closes, plans are already underway to reimagine the restaurant space. While we’re not quite ready to share what’s next, we’re excited about the future and look forward to introducing something new in time.

Meanwhile, our reimagined breakfast service continues for hotel guests, offering flexibility and comfort—whether you prefer to relax in the lobby, enjoy a bite in your room, or fuel up before your next adventure. There’s something for everyone.
